The chicken slowly simmers in a rich sauce made with Coca-Cola, garlic, ginger, and savory seasonings until it becomes tender and coated in a beautiful caramelized glaze. The result is juicy chicken with a glossy, slightly sticky sauce that’s packed with flavor.

What makes this dish special is how simple the ingredients are. A few pantry staples come together to create a sauce that tastes complex and comforting at the same time. It’s perfect served over warm rice and makes a wonderful family dinner when you want something a little different but still easy to cook.


Ingredients (2–3 servings)

  • 3 chicken thighs, cut in half

  • 1 chicken drumstick, cut into pieces (optional)

  • Salt, to taste

  • Black pepper, to taste

For the sauce

  • tablespoons cooking oil

  • ¼ medium onion, finely chopped

  • 2 garlic cloves, minced

  • 1 teaspoon fresh grated ginger

  • cup ketchup

  • 1 teaspoon soy sauce

  • ½ tablespoon Worcestershire sauce

  • ¼ teaspoon red pepper flakes (optional)

  • 1 cup Coca-Cola


Instructions

Start by preparing the chicken. If the pieces are large, cut them into smaller portions so they cook evenly. Season lightly with salt and black pepper.

Heat the oil in a deep skillet or braising pan over medium-high heat. When the oil is hot, add the chicken pieces in a single layer. Let them cook undisturbed for about 3–4 minutes until the bottom becomes golden brown.

Turn the chicken over and cook the other side for another 3–4 minutes. Once both sides are nicely browned, remove the chicken from the pan and set it aside.

Lower the heat to medium-low. In the same pan, add the chopped onion and cook for a few minutes until it begins to soften.

Add the minced garlic and grated ginger. Stir for about 30 seconds so the flavors become fragrant.

Mix in the ketchup, soy sauce, Worcestershire sauce, and red pepper flakes. Stir everything together.

Slowly pour in the Coca-Cola and stir well. Increase the heat slightly and bring the sauce to a gentle boil.

Return the chicken to the pan and spoon some of the sauce over the top. Cover with a lid and let it simmer for about 20 minutes.

After 20 minutes, remove the lid and continue cooking for another 20–25 minutes. The sauce will reduce and thicken naturally, creating a sticky glaze that coats the chicken.

Turn the chicken occasionally so it becomes evenly coated with the caramelized sauce.

Once the sauce has thickened and the chicken is tender, remove from the heat.


Notes or Tips

Letting the sauce reduce naturally creates a richer flavor, so there’s no need to add cornstarch or flour.

Fresh ginger adds a lot of depth to the sauce, but if you don’t have it, a small pinch of ground ginger can work as well.

This dish pairs wonderfully with steamed rice, simple noodles, or sautéed vegetables.
