CHEESY STUFFED BEEF and BEAN BURRITOS ❤

These cheesy stuffed beef and bean burritos are hearty, flavorful, and perfect for a filling meal. Packed with seasoned ground beef, refried beans, Mexican rice, cilantro, bell peppers, and melty cheese, they toast beautifully on a griddle for a golden, crispy finish. Comfort food at its best!
Ingredients
Beef Filling

1 lb (450g) ground chuck (80/20)

1 tbsp all-purpose seasoning (your preferred blend)

½ medium onion, diced

2 garlic cloves, minced

½ yellow bell pepper, diced

2 tbsp chopped cilantro

Salt, to taste
For Assembling

Large flour tortillas

Refried beans
-
Mexican rice
-
Freshly grated Monterey Jack (or any cheese you prefer)

Butter (for toasting)
For Serving

Sour cream

Guacamole

Your favorite salsa
Instructions
1. Prepare the Beef Filling

Heat a skillet over medium-high heat.

Add the ground chuck and cook until it begins to brown and release fat.

Remove excess fat, leaving a small amount for flavor.

Add the all-purpose seasoning and mix well.

Add diced onions and cook until slightly translucent.

Stir in minced garlic and cook for 1 minute.

Add bell pepper, cilantro, and a pinch of salt. Combine everything.

Reduce heat to medium-low, cover, and cook for about 8 minutes.

Taste and adjust seasoning as needed. Turn off heat.
2. Assemble the Burritos

Lay a large flour tortilla on a flat surface.

Spread a generous layer of refried beans.

Add a small handful of cheese as the bottom layer.

Spoon on a generous amount of the beef mixture.

Add a scoop of Mexican rice.

Top with more cheese.

Fold the sides inward, then roll tightly into a burrito.
3. Toast the Burritos

Heat a griddle or skillet to 375°F (190°C).

Add a little butter.

Place burritos seam-side down and toast until golden and crispy.
