CHEESY STUFFED BEEF and BEAN BURRITOS ❤

These cheesy stuffed beef and bean burritos are hearty, flavorful, and perfect for a filling meal. Packed with seasoned ground beef, refried beans, Mexican rice, cilantro, bell peppers, and melty cheese, they toast beautifully on a griddle for a golden, crispy finish. Comfort food at its best!


Ingredients

Beef Filling

  • 1 lb (450g) ground chuck (80/20)

  • 1 tbsp all-purpose seasoning (your preferred blend)

  • ½ medium onion, diced

  • 2 garlic cloves, minced

  • ½ yellow bell pepper, diced

  • 2 tbsp chopped cilantro

  • Salt, to taste


For Assembling

  • Large flour tortillas

  • Refried beans

  • Mexican rice

  • Freshly grated Monterey Jack (or any cheese you prefer)

  • Butter (for toasting)


For Serving

  • Sour cream

  • Guacamole

  • Your favorite salsa


Instructions

1. Prepare the Beef Filling

  1. Heat a skillet over medium-high heat.

  2. Add the ground chuck and cook until it begins to brown and release fat.

  3. Remove excess fat, leaving a small amount for flavor.

  4. Add the all-purpose seasoning and mix well.

  5. Add diced onions and cook until slightly translucent.

  6. Stir in minced garlic and cook for 1 minute.

  7. Add bell pepper, cilantro, and a pinch of salt. Combine everything.

  8. Reduce heat to medium-low, cover, and cook for about 8 minutes.

  9. Taste and adjust seasoning as needed. Turn off heat.


2. Assemble the Burritos

  1. Lay a large flour tortilla on a flat surface.

  2. Spread a generous layer of refried beans.

  3. Add a small handful of cheese as the bottom layer.

  4. Spoon on a generous amount of the beef mixture.

  5. Add a scoop of Mexican rice.

  6. Top with more cheese.

  7. Fold the sides inward, then roll tightly into a burrito.


3. Toast the Burritos

  1. Heat a griddle or skillet to 375°F (190°C).

  2. Add a little butter.

  3. Place burritos seam-side down and toast until golden and crispy.

  4. Flip and toast the other side until evenly browned.


4. Serve

Plate the burritos and serve with:

  • Guacamole

  • Sour cream

  • Hot salsa

Enjoy warm!


Notes

  • Monterey Jack melts beautifully, but cheddar or a Mexican blend works well too.

  • Toasting in butter gives the burritos a rich, golden crust.

  • You can add jalapeños, corn, or sautéed veggies for variation.
