Instructions
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large mixing bowl, add the flour, baking powder, sugar, and salt. Whisk thoroughly so the ingredients are evenly combined.
Grate the cold butter directly into the flour mixture using a box grater. Toss the butter pieces gently with a spoon so they are coated with flour and remain separated.
Use your fingers if needed to break up any large clumps. The mixture should look crumbly with small bits of butter throughout.
Make a small well in the center of the flour mixture and pour in the cold buttermilk.
Gently mix with a spoon until the dough just begins to come together. Do not overmix. Some loose flour in the bowl is perfectly fine.
Lightly flour a work surface and transfer the dough onto it.
Gently press the dough together into a rough rectangle. Fold the dough over itself and press it down again. Repeat this folding process about three times to create layers.
Pat the dough into a rectangle about ¾ inch thick.
Using a biscuit cutter, press straight down into the dough to cut biscuits. Avoid twisting the cutter, which can prevent the biscuits from rising properly.
Place the biscuits close together on the prepared baking sheet.
Gather any remaining dough, gently press it together again, and cut additional biscuits until all the dough is used.
Bake for about 14 minutes, or until the biscuits are golden brown.
Remove from the oven and brush the tops with melted butter while they are still hot.
Serve warm.
