Instructions
Start by preparing the dough. Place the flour, yeast, sugar, salt, and cinnamon in a large mixing bowl and stir briefly to combine. Add the butter, eggs, vanilla, and warm evaporated milk.
Mix the ingredients together until a soft dough forms. If using a stand mixer, knead with a dough hook for about 10–12 minutes until the dough becomes smooth and elastic. If mixing by hand, knead the dough on a lightly floured surface for about 12–15 minutes until it becomes soft and no longer sticks to the bowl.
Form the dough into a smooth ball. Lightly oil a large bowl, place the dough inside, and turn it once so the surface is coated. Cover with plastic wrap or a clean towel and let it rest in a warm place for about 1–1½ hours, or until it doubles in size.
Once the dough has risen, place it on a lightly floured surface. Roll it out gently until it is about ½ inch thick. Use a doughnut cutter, biscuit cutter, or two different round cutters to shape doughnut rings. Gather the remaining dough and form small doughnut holes if desired.
Place each doughnut on small squares of parchment paper or a lightly floured tray. Cover them loosely and allow them to rise again for about 20–30 minutes. They should puff slightly but do not need to double in size.
Heat vegetable oil in a deep pot or fryer to about 320°F (160°C). Carefully place the doughnuts into the hot oil. Fry for about 1–1½ minutes on each side until golden brown. Remove them with a slotted spoon and place them on paper towels to drain.
While the doughnuts are still warm, prepare the glazes. For the vanilla glaze, whisk together powdered sugar, milk, and vanilla until smooth. For the chocolate glaze, mix powdered sugar, cocoa powder, milk, and vanilla until thick and glossy.
Dip the warm doughnuts into the glaze, coating the tops evenly. If you like, immediately add sprinkles or roll some doughnuts in plain sugar.
Allow the glaze to set for a few minutes before serving.
Notes or Tips
Fresh doughnuts taste best on the same day they are made while they are soft and fluffy.
If you don’t have a stand mixer, kneading by hand works perfectly—it just takes a little more time.
Keep the oil temperature moderate. If the oil is too hot, the outside will brown too quickly while the inside stays undercooked.
