Ingredients

Sticky Walnut Topping

  • ½ stick butter, melted

  • ¼ cup brown sugar

  • ¼ cup corn syrup

  • 1 cup walnuts, chopped

Banana Bread Batter

  • 3 very ripe bananas, mashed

  • 1 stick butter, melted

  • ¼ cup granulated sugar

  • ¼ cup light brown sugar

  • 2 eggs

  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 1¾ cups all-purpose flour

  • 1 teaspoon baking soda

  • ¾ teaspoon ground cinnamon

  • ⅛ teaspoon ground cloves

Instructions

1. Prepare the Walnut Topping

In a bowl, combine the melted butter, brown sugar, and corn syrup. Stir until smooth.
Add the chopped walnuts and mix until evenly coated.
Set aside.

2. Mash the Bananas

Mash the ripe bananas until smooth. Very ripe bananas work best because they are sweeter and easier to mash. Set aside.

3. Prepare the Wet Ingredients

In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.

4. Mix the Dry Ingredients

In a separate bowl, combine the flour, baking soda, cinnamon, and ground cloves.
Mix thoroughly to ensure even distribution of the leavening.

5. Combine the Batter

Add the mashed bananas to the wet ingredients and mix well.
Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

6. Assemble

Lightly grease a baking dish with non-stick spray.
Spread the walnut topping evenly across the bottom of the dish.
Pour the banana bread batter gently over the topping and smooth the surface.

7. Bake

Preheat the oven to 350°F (175°C).
Bake on the center rack for 50 minutes, or until a toothpick inserted into the center comes out clean.

8. Cool and Flip

Remove from the oven and let cool slightly on a wire rack.
Carefully invert the bread onto a serving platter while still warm.
