Pan de Elote is a traditional Mexican sweet corn cake that is often described as a cross between cornbread and custard. It is moist, soft, and naturally sweet, with a creamy texture that comes from fresh corn and sweetened condensed milk. This dish can be enjoyed as a dessert, served with coffee or hot chocolate, or paired with savory meals like roasted meats or stews. It is simple to prepare, comforting, and full of nostalgic flavor.

Ingredients
4 cups fresh corn kernels (or 2 cans, 15.25 oz each, drained well)
3 extra-large eggs
1 can (14 oz) sweetened condensed milk
1/2 cup salted butter, melted
2 teaspoons baking powder
1/4 teaspoon salt
7 tablespoons all-purpose flour
1 teaspoon vanilla extract
Non-stick spray or butter for greasing the baking dish

Instructions
Preheat the oven to 350°F (175°C) and position the rack in the center. Grease a baking dish with non-stick spray or butter and set aside.
Place most of the corn into a blender, reserving about 1/2 cup for texture. Add the melted butter, sweetened condensed milk, and vanilla extract. Blend until smooth.
Add the eggs, baking powder, salt, and flour to the blender and blend again until fully combined. The mixture will be very wet, which is normal.
Pour the blended mixture into a bowl and fold in the reserved corn kernels to add texture.
Transfer the batter to the prepared baking dish and spread evenly.
Bake for 45 minutes to 1 hour, or until the top is golden and a toothpick inserted in the center comes out mostly clean.
Remove from the oven and allow the pan de elote to cool for at least 30 minutes before slicing, allowing it to fully set.

Letting the pan de elote rest before cutting is essential for the custard-like texture to develop.
