These crispy turkey and potato sliders are golden on the outside, soft and savory on the inside, and perfect for a quick meal or snack. Ingredients (2–3 servings)
- 2 cups cooked turkey, finely chopped
- 2 cups mashed potatoes (cold or room temperature)
- 2 eggs
- 1/4 cup green onions, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1/4–1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 2–3 tablespoons cooking oil (such as avocado or vegetable oil)
- 1 tablespoon butter
- Optional: sliced cheese (Swiss, cheddar, etc.)
- Small buns or rolls for serving
Instructions
Start by placing the mashed potatoes in a large bowl. Crack in the eggs and mix them together until smooth and well combined.
Add the chopped turkey, green onions, and red bell pepper. Sprinkle in the onion powder, red pepper flakes (if using), salt, and pepper. Mix everything together until evenly combined.
Sprinkle in the flour and gently fold it into the mixture. The texture should be slightly sticky but firm enough to shape. If it feels too soft, add a little more flour, one tablespoon at a time.
Heat a large skillet or griddle over medium heat. Add the oil and butter, letting the butter melt completely.
Lightly oil your hands, then scoop out small portions of the mixture and shape them into patties. Place them onto the hot surface and gently press them down.
Cook for about 3 minutes on the first side without moving them, allowing a golden crust to form. Flip carefully and cook for another 3 minutes on the other side until both sides are crispy and heated through.
If adding cheese, place a small slice on top of each patty during the last minute of cooking and let it melt.
Transfer the patties to a plate lined with paper towels to absorb excess oil.
Serve the patties on small buns as sliders, or enjoy them on their own.
