Ingredients

For the Dough

  • 2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2/3 teaspoon instant yeast
  • 1 1/2 tablespoons shortening
  • 3/4 cup warm milk (about 120–130°F)

  • Vegetable oil for deep frying

Instructions

In a large mixing bowl, combine the flour, salt, baking powder, and instant yeast. Stir everything together until evenly mixed.

Add the shortening and use your fingers or a fork to work it into the flour until the mixture looks like fine crumbs.

Slowly pour in the warm milk a little at a time while mixing. Continue stirring until a soft dough forms.

Transfer the dough onto a lightly floured surface and knead for about 5–7 minutes until smooth and elastic.

Place the dough on the counter and cover it with an upside-down bowl or clean towel. Let it rest for 10 minutes.

Cut the dough into four equal pieces. Roll one piece into a ball and keep the remaining dough covered so it does not dry out.

Using a rolling pin, roll the dough into a circle slightly thicker than a tortilla. Try to keep the thickness even so the pastries puff properly.

Cut the dough into squares or triangles using a knife or pizza cutter.

Heat oil in a deep pan to 350–375°F.

Gently stretch one piece of dough slightly before placing it into the hot oil. Use a spoon to lightly hold it under the oil for a few seconds until it puffs up.

Flip and fry until both sides are golden brown. Remove and place on a cooling rack or paper towels.

While still warm, coat some pastries in cinnamon sugar if desired. Dust others with powdered sugar or drizzle with honey or melted chocolate spread.
