Ingredients
- 3/4 lb sweet Italian sausage
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion

- 3 cups chicken broth
- 3/4 cup ditalini pasta
- 3/4 cup heavy cream

- Salt and black pepper to taste

Instructions
Heat a large pot over medium heat and add the olive oil. Add the Italian sausage and cook until browned, breaking it into chunks with a spoon as it cooks. Once fully cooked, transfer the sausage to a plate and set aside.
In the same pot, add the onion, celery, and red bell pepper. Cook for about 5 minutes, stirring occasionally, until the vegetables soften and become fragrant.
Add the garlic and Italian seasoning. Stir for about 1 minute, just until the garlic smells aromatic.
Pour in the chicken broth and bring everything to a gentle boil. Reduce the heat slightly and stir in the ditalini pasta.
Add the heavy cream and season lightly with salt and black pepper. Let the soup simmer for about 8–10 minutes, or until the pasta is tender.
Stir in the chopped spinach, cooked sausage, and red pepper flakes if using. Let the soup cook for another 2 minutes until the spinach wilts.
Turn off the heat and slowly stir in the parmesan cheese until melted and creamy.
