Ingredients
For the Cheese Sauce
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 garlic clove, finely minced
- 2 cups milk
- 1/4 teaspoon crushed rosemary
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 6 oz sharp cheddar cheese, freshly grated
For the Vegetable Bake
- 6 cups fresh broccoli florets
- 3/4 cup yellow bell pepper, sliced
- 3/4 cup red bell pepper, sliced
- 1/2 medium onion, chopped
- Non-stick cooking spray
For the Topping
- 2 cups panko breadcrumbs
- 1/2 cup melted butter
- 1/4 cup fresh parsley, chopped
Instructions
Preheat your oven to 350°F (175°C). Lightly spray an 8×12 baking dish with non-stick spray and set aside.
Start by making the cheese sauce. In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for about 2 minutes, whisking constantly, until the mixture turns a light golden color.
Add the minced garlic and cook for about 20 seconds until fragrant.
Slowly pour in the milk a little at a time while whisking continuously. Add the rosemary, black pepper, and salt. Keep whisking until the sauce becomes smooth, thick, and lightly bubbly.
Turn off the heat and slowly stir in the shredded cheddar cheese a handful at a time. Whisk gently until the cheese melts completely and the sauce becomes creamy.
Place the broccoli, yellow bell pepper, red bell pepper, and onion into the prepared baking dish. Spread the vegetables evenly.
Pour the warm cheese sauce over the vegetables, making sure everything is lightly coated.
In a separate bowl, combine the panko breadcrumbs, melted butter, and chopped parsley. Mix until the breadcrumbs are evenly coated.
Sprinkle the breadcrumb mixture evenly over the casserole.
Bake uncovered for 30–40 minutes, or until the top is golden brown and the vegetables are tender.
Let the casserole rest for a few minutes before serving.
Notes & Tips
- Fresh broccoli works best because it stays slightly crisp while baking.
- You can swap cheddar cheese for Monterey Jack, Gruyère, or mozzarella for a different flavor.
- For extra richness, add a little parmesan cheese to the breadcrumb topping.
- If you like a little heat, sprinkle in red pepper flakes before baking.
- This dish reheats beautifully and tastes just as comforting the next day.
