Ingredients
- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 2 medium Roma tomatoes, roughly chopped
- 1/4 small white onion, chopped
- 2 garlic cloves
- 1 small jalapeño, whole (optional)
- 2 tablespoons chopped fresh cilantro
- 1/3 cup diced carrots
- 2 cups chicken broth
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1 teaspoon chicken bouillon powder
- 1/2 teaspoon salt (or to taste)
Serves 2-3 people.
Instructions
Add the tomatoes, onion, garlic, cumin, black pepper, and 1/4 cup of the chicken broth to a blender. Blend until smooth and set aside.
Heat the oil in a medium saucepan over medium-high heat.
Add the rice and cook, stirring frequently, until it turns lightly golden and smells nutty, about 5-6 minutes.
Carefully pour in the tomato mixture and stir well to coat the rice.
Add the carrots, cilantro, bouillon powder, remaining chicken broth, and the whole jalapeño if using.
Bring everything to a gentle boil.
Reduce the heat to low, cover the pan with a lid, and cook for 18 minutes without lifting the lid.
Remove the pan from the heat and let it rest, still covered, for 10 minutes.
Remove the jalapeño and fluff the rice gently with a fork before serving.
