Ingredients

For the Chicken

  • 2 large chicken breasts, cut in half and filleted

  • Pickle juice (enough to cover the chicken)

  • Water (a little to dilute the brine)

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp white pepper

(The spices above are optional but recommended for flavor.)


Dry Breading Mixture

  • 1 cup all-purpose flour

  • 1½ tsp powdered sugar

  • 1 tsp salt

  • 1½ tsp paprika

  • 1 tsp white pepper

  • ½ tsp celery salt

  • 1 tsp garlic powder

  • 1 tsp MSG


Egg Wash

  • 1 egg

  • ¼ cup milk


Sauce (Copycat Chick-fil-A Sauce)

  • ½ cup mayonnaise

  • 3 tbsp honey

  • 2 tbsp lemon juice

  • 2 tbsp yellow mustard

  • 2 tbsp barbecue sauce


For Assembly

  • Hamburger buns

  • Butter for toasting

  • Pickle slices (thick cut)

  • Waffle fries (optional side)


Instructions

Prepare the Chicken

  1. Slice each chicken breast horizontally to create thinner fillets.

  2. Pound gently inside a zip-top bag until even in thickness.

  3. Place chicken into a container and cover with pickle juice.

  4. Add the optional spices (garlic powder, paprika, white pepper).

  5. Add a small splash of water to prevent the chicken from becoming too soft.

  6. Refrigerate and marinate for 30–35 minutes.


Prepare the Dry Bread Mixture

  1. Combine flour, powdered sugar, salt, paprika, white pepper, celery salt, garlic powder, and MSG in a bowl.

  2. Mix thoroughly and set aside.


Prepare the Egg Wash

  1. Beat the egg well.

  2. Add the milk and whisk until smooth.


Bread the Chicken

  1. Remove chicken directly from the brine.

  2. Dip into the egg wash.

  3. Transfer to the flour mixture.

  4. Press firmly into the flour—this step creates crispy clumps like Chick-fil-A.

  5. Place the coated chicken on a plate and repeat for all pieces.


Fry the Chicken

  1. Heat peanut oil (or canola oil) to 325°F (163°C).

  2. Fry each piece of chicken for 4–7 minutes, depending on thickness.

    • Thin pieces: ~4 minutes

    • Thick pieces: 5–7 minutes

  3. Fry until golden brown and crispy.

  4. Drain on a rack or paper towels.


Toast the Buns

  1. Lightly butter the buns.

  2. Toast on a hot griddle until golden.


Make the Sauce

  1. Mix mayonnaise, honey, lemon juice, mustard, and barbecue sauce.

  2. Stir until smooth and creamy.


Assemble the Sandwich

  1. Spread sauce on the toasted buns.

  2. Add 2–4 pickle slices.

  3. Place the fried chicken on top.

  4. Add more sauce if desired.

  5. Serve with waffle fries.


Notes

  • Pickle brine creates signature Chick-fil-A tenderness.

  • Pressing the breading firmly is key for crispy texture.

  • MSG is optional but adds authentic fast-food flavor.

  • Peanut oil produces the closest result to Chick-fil-A, but canola oil works too.
