ENTOMATADAS DE QUESO FRESCO…EASY AND DELICIOUS!❤

Entomatadas are a classic Mexican comfort dish made with soft corn tortillas dipped in a warm tomato-based sauce and filled with crumbly queso fresco. They are simple, flavorful, and perfect for days when you want something homemade without spending too much time in the kitchen. Fresh tomatoes, garlic, and spices create a bright, savory sauce that pairs beautifully with cheese, crema, and fresh toppings.

Ingredients

Tomato sauce
5 Roma tomatoes, ripe
¼ small onion
1 serrano pepper, seeds removed
2 garlic cloves
½ teaspoon ground cumin
½ teaspoon ground black pepper
1 tablespoon chicken bouillon
A pinch of dried oregano
A small amount of water
1 tablespoon oil

For the entomatadas
Corn tortillas
Oil, for lightly frying tortillas
Queso fresco, crumbled

Toppings (optional)
Lettuce
Thinly sliced radishes
Chopped onion
Mexican crema or sour cream
Avocado slices

Instructions
Cut the tomatoes into chunks and place them in a blender along with the onion, serrano pepper, garlic, ground cumin, and black pepper. Add a small amount of water, just enough to help blend, and blend until smooth. Add the chicken bouillon and oregano, then blend again until fully combined.

Heat one tablespoon of oil in a saucepan over medium heat. Sauté a small amount of chopped onion until fragrant, then pour in the blended tomato mixture. Cover and let the sauce simmer on low heat for about 15 minutes, allowing the flavors to develop.

While the sauce simmers, heat a small amount of oil in a skillet. Lightly pass each corn tortilla through the hot oil just until softened, not crispy. Drain on paper towels and set aside.

Crumble the queso fresco and prepare any toppings you plan to use. To assemble, carefully dip each tortilla into the warm tomato sauce, fill with queso fresco and a little onion if desired, then roll gently. Place the rolled tortillas on a plate with a spoonful of sauce underneath.

Spoon additional sauce over the top and garnish with more cheese, lettuce, radishes, crema or sour cream, and avocado slices as desired. Serve warm.

Notes or Tips
If you prefer a spicier sauce, keep some or all of the serrano seeds.
Do not over-fry the tortillas, as they will soften further once dipped in the sauce.
Entomatadas are best served fresh, but the sauce can be made ahead and reheated.
This dish works well as a light meal or served alongside beans or rice.
