Ingredients (2–3 servings)
- 2 large chicken breasts (cut and flattened into 3–4 fillets)
- 1 cup pickle juice (for brining)
- 1/4 cup water
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp white pepper
For the coating:
- 1 cup all-purpose flour
- 1 1/2 tsp paprika
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp white pepper
- 1/2 tsp celery salt
- 1 1/2 tsp powdered sugar
For the egg wash:
- 1 egg
- 1/4 cup milk
For the sauce:
- 1/2 cup mayonnaise
- 2 tbsp honey
- 2 tbsp yellow mustard
- 2 tbsp barbecue sauce
- 1–2 tbsp lemon juice
Other:
- 2–3 burger buns
- Butter (for toasting buns)
- Pickle slices
- Oil for frying (peanut or vegetable oil)
Instructions
Start by preparing the chicken. Slice each breast into thinner fillets and gently pound them until they are even in thickness. This helps them cook quickly and evenly.
Place the chicken into a bowl and pour in the pickle juice and water. Add a pinch of garlic powder, paprika, and white pepper. Let the chicken marinate in the refrigerator for about 30 minutes. This step adds flavor and keeps the chicken juicy.
While the chicken marinates, mix all the coating ingredients in a bowl. In a separate bowl, whisk together the egg and milk to create the egg wash.
Remove the chicken from the marinade and let excess liquid drip off. Dip each piece into the egg mixture, then press it firmly into the seasoned flour. Pressing helps create a crispy, textured coating.
Heat oil in a deep pan or fryer to medium heat (around 160–165°C / 320–330°F). Fry the chicken pieces for about 4–5 minutes, flipping halfway through, until golden brown and fully cooked. Remove and let them rest on paper towels.
Butter the buns lightly and toast them on a pan until golden.
To make the sauce, mix mayonnaise, honey, mustard, barbecue sauce, and lemon juice until smooth.
Assemble the sandwich by spreading sauce on the bun, adding crispy chicken, and topping with pickle slices. Add more sauce if you like, then close with the top bun.
