This dessert is especially great for summer gatherings, holiday cookouts, or anytime you want a simple treat that feels a little special. The best part is that it comes together in just minutes and can easily be customized with your favorite fruits or cookies. Once you try it, you’ll see how easy it is to turn a few simple ingredients into a beautiful dessert everyone will enjoy.

Ingredients (2–3 servings)

For the crumble topping

  • 6 oatmeal cookies, roughly crushed

  • 2 tablespoons butter

  • 3 tablespoons chopped pecans

  • ½ teaspoon ground cinnamon

For the sundae

  • 3–4 scoops vanilla ice cream

  • ¼ cup blueberry pie filling or blueberry topping

  • ¼ cup cherry pie filling or cherry topping

Optional toppings

  • Extra chopped nuts

  • Fresh berries

  • Whipped cream

Instructions

Start by roughly crushing the oatmeal cookies. You can break them apart with your hands or place them in a bag and gently crush them. The pieces should be small but not powdered.

Place a skillet over medium-low heat and melt the butter. Once the butter is fully melted, add the chopped pecans and cinnamon. Stir gently for about a minute so the nuts toast slightly and release their aroma.

Add the crushed cookies to the skillet and stir everything together. Continue cooking for about another minute, mixing well so the cookies absorb the buttery mixture. The crumble should turn lightly golden and smell fragrant. Remove from the heat and allow it to cool slightly.

To assemble the sundae, place a scoop of vanilla ice cream in a serving glass or bowl. Sprinkle a generous spoonful of the warm crumble over the ice cream.

Add a layer of blueberry topping, followed by another small scoop of ice cream.

Spoon cherry topping over the ice cream and finish with another sprinkle of the crumble mixture on top.

Serve immediately while the ice cream is cold and the crumble is slightly warm.

Notes or Tips

You can easily change the fruit toppings depending on what you have at home. Strawberry, peach, or apple pie filling all work wonderfully.

If you prefer a lighter dessert, add fresh fruit instead of pie filling. Fresh strawberries, blueberries, or sliced peaches are excellent options.

The crumble can be prepared ahead of time and stored in an airtight container. Just warm it slightly before using for the best texture.

For a fun presentation, serve the sundaes in clear glasses so the colorful layers of fruit, ice cream, and crumble are visible.

If you make this dessert, I’d love to hear how you customize it. What fruit topping would you choose for your sundae? 🍨
