This jalapeño onion cheeseburger is perfect for those moments when you’re craving something satisfying and homemade. It combines a juicy beef patty, sweet caramelized onions, melted cheese, and the bold kick of fresh jalapeños, all tucked into a toasted bun.
What makes this burger special is how simple ingredients come together to create something unforgettable. ¾ pound ground beef (80/20 recommended)

1 large onion, thinly sliced

3 burger buns

3 slices cheese (Colby Jack, Monterey Jack, or cheddar)

1 fresh jalapeño, thinly sliced

2 tablespoons mayonnaise

2 tablespoons ketchup

1 tablespoon mustard

2 tablespoons dill relish

Instructions
Start by slicing the onion as thinly as possible. Very thin slices work best because they cook quickly and soften nicely when placed on the burgers.
Divide the ground beef into three equal portions. Gently form each portion into a ball and then flatten it into a patty slightly larger than your burger bun, since the meat will shrink as it cooks.
Season the patties lightly with salt and freshly ground black pepper.
Heat a skillet, griddle, or grill over medium-high heat. Place the patties on the hot surface and let them cook for about 2–3 minutes until the edges begin to brown.
Pile a generous handful of the sliced onions on top of each patty. The onions will cook and shrink as the burgers continue to cook.
Flip the patties carefully so the onions are now underneath the burger. Place a slice of cheese on top of each patty and cook for another 2–3 minutes until the cheese melts and the onions become lightly caramelized.
While the burgers finish cooking, place the burger buns on the skillet or griddle to toast them lightly for about a minute.
Spread mayonnaise on the bottom half of each bun. Place the burger patty with the onions onto the bun.
Add ketchup, mustard, and a spoonful of dill relish. Top with fresh jalapeño slices and any additional toppings you like such as lettuce or tomato.
Finish with the top bun and serve immediately.
