Ingredients (2–3 servings)

  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 2 tablespoons finely chopped red onion
  • 1 garlic clove, minced
  • 1/8 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 6 oz frozen spinach, thawed and well-drained
  • 6 oz marinated artichoke hearts, drained and chopped
  • 3/4 cup freshly grated mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Optional: pinch of red pepper flakes for garnish

Instructions
Lightly grease your crockpot with non-stick spray and set it to high (or low if you prefer a slower cook).

Add the softened cream cheese, sour cream, and mayonnaise directly into the crockpot. Stir gently to start combining them.

Mix in the chopped red onion, minced garlic, salt, and pepper. These ingredients add a nice depth of flavor, so make sure they’re evenly distributed.

Add the drained spinach, making sure you’ve squeezed out as much liquid as possible to avoid a watery dip. Stir in the chopped artichoke hearts.

Sprinkle in the freshly grated mozzarella and Parmesan cheese. Give everything a light mix—don’t worry if it’s not fully combined yet, it will melt together as it cooks.

Cover with the lid and let it cook on high for about 45 minutes to 1 hour, or until everything is melted, hot, and slightly bubbling around the edges.

Once ready, stir well until smooth and creamy. If serving right away, switch the crockpot to “keep warm” to maintain that perfect texture.

Spoon the dip into a serving dish and sprinkle a few red pepper flakes on top if you like a little heat.

Notes & Tips

  • Always squeeze the spinach well—this is key to keeping the dip thick and creamy.
  • Freshly grated cheese melts better and gives a smoother texture than pre-shredded.
  • You can cook it on low for 2–3 hours if you have more time.
  • Serve with crusty bread, crackers, or pita chips for the best experience.
  • This dip stays warm and delicious in the crockpot, making it perfect for gatherings.

Give it a try and share it with friends—you might want to make extra, because it goes fast!
