There’s nothing quite like biting into a perfectly crispy piece of fried fish—golden on the outside, tender and flaky on the inside. These seasoned fish bites are inspired by a classic comfort dish but made simple and approachable for any home cook. They’re packed with bold flavor, easy to prepare, and perfect for sharing with family or friends. Whether you serve them with fries, salad, or just your favorite dipping sauce, this is one recipe that always satisfies.

Ingredients (2–3 servings)

  • 500–700g white fish fillets (catfish or similar), cut into bite-sized pieces
  • ¾ cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil

Wet mixture:

  • 1 cup milk
  • 1 tablespoon white vinegar (to make quick buttermilk)
  • 1 egg

For frying:

  • 2–3 cups vegetable or canola oil

Instructions
Start by preparing your seasoning mix. In a bowl, combine paprika, black pepper, garlic powder, onion powder, salt, cayenne (if using), thyme, and basil. Mix well.

In another bowl, combine the cornmeal and flour. Add most of the seasoning mix into this dry mixture and stir until evenly blended. This ensures every bite is flavorful.

To make a quick buttermilk, stir the vinegar into the milk and let it sit for a minute. Then whisk in the egg until smooth.

Lightly season the fish pieces with a small portion of the remaining spice mix and a pinch of salt. Toss to coat evenly.

Dip the fish pieces into the milk mixture, making sure they are fully coated. Then transfer them into the cornmeal mixture and coat well on all sides. Place coated pieces on a plate.

Heat oil in a deep pan over medium-high heat until hot (around 175–190°C if you have a thermometer). Carefully add the fish pieces in batches, making sure not to overcrowd the pan.

Fry for about 3–5 minutes, turning as needed, until golden brown and crispy. Remove and place on a rack or paper towels to drain excess oil.

Serve hot with your favorite sides and dipping sauces.

  • Keeping the oil temperature steady is key for crispy, non-greasy fish.
  • Don’t overcrowd the pan—this helps maintain the right temperature.
