Wrap it all in a warm tortilla, and you’ve got a meal worth waking up for.
Ingredients (2–3 servings)
- 1 (300–340g) can spam, cut into small cubes
- 5–6 eggs
- 2 tablespoons water
- 1 tablespoon vegetable oil
For the salsa:
- 2 medium tomatoes, roughly chopped
- 2 small serrano peppers (adjust to taste)
- ¼ small onion, chopped
- 2 green onions, chopped
- 1 clove garlic, minced
- Small handful fresh cilantro (optional)
- ⅓ cup water
- Salt and black pepper, to taste
- 1 tablespoon oil
For the beans:
- 1½ cups cooked pinto beans (with a little broth)
- 2 tablespoons cooking oil or bacon grease
- ¼ cup onion, finely chopped
- ½ teaspoon seasoning (salt or bouillon, to taste)
Optional for serving:
- Shredded cheese
- Warm tortillas
- Extra salsa
Instructions
Start by preparing the salsa. Heat a little oil in a pan over medium heat and sauté the chopped onions for about a minute until fragrant. Add the serrano peppers and cook briefly, then stir in the garlic. After about a minute, add the tomatoes and cilantro. Season with salt and pepper, pour in a bit of water, and let it simmer on low heat while you prepare the rest.
For the beans, heat oil or bacon grease in another pan. Add the chopped onions and cook until softened. Stir in the beans and let them heat through. Mash them gently and continue cooking on low heat, stirring occasionally, until they thicken and develop a slightly creamy texture.
In a separate skillet, heat oil over medium heat and add the cubed spam. Cook until the pieces are golden and lightly crispy on the edges. Lower the heat to low.
In a bowl, whisk the eggs with water, a pinch of salt, and pepper. Pour the eggs into the pan with the spam and cook slowly, stirring gently, until soft and fluffy.
Spoon the warm salsa over the eggs and gently fold everything together. Sprinkle in a small amount of cheese if you like, cover the pan, and let it sit for a minute so the cheese melts.
Serve hot with a side of refried beans and warm tortillas.
