Ingredients
- 1 lb ground beef (80/20 recommended)
- 5 beef hot dogs or smoked sausages, sliced into bite-sized pieces
- 1/2 medium onion, diced
- 2 green onions, chopped
- 1/3 cup diced yellow bell pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp brown sugar
- 2 tbsp Worcestershire sauce
- 1/4 cup ketchup
- 1/3 cup barbecue sauce
- 1/4 cup low-sodium beef broth
- 32 oz frozen tater tots, slightly thawed
- 3 cups freshly shredded Colby Jack cheese
- Non-stick cooking spray
Instructions
Preheat your oven to 375°F. Lightly spray a 9×13-inch baking dish with non-stick cooking spray and set aside.
Heat a large skillet over medium heat. Add the ground beef and cook until fully browned, breaking it apart as it cooks. Drain most of the grease, leaving just a small amount in the skillet for flavor.
Add the sliced hot dogs, diced onion, green onions, and bell pepper to the skillet. Stir everything together and cook for 3–4 minutes until the onions begin to soften.
Season the mixture with garlic powder, onion powder, pepper, salt, and brown sugar. Pour in the Worcestershire sauce, ketchup, barbecue sauce, and beef broth. Stir well until everything is coated in the sauce and simmer for 2–3 minutes.
Spread a layer of tater tots across the bottom of the prepared baking dish. Spoon the beef mixture evenly over the top.
Sprinkle half of the shredded cheese over the meat layer. Arrange the remaining tater tots on top, then finish with the rest of the cheese.
Bake uncovered for 30–35 minutes, or until the cheese is melted and bubbly and the tater tots are crispy and golden brown.
Let the casserole cool for about 5 minutes before serving.
Notes & Tips
- Freshly shredded cheese melts smoother and tastes better than pre-packaged shredded cheese.
- You can swap the hot dogs for smoked sausage for a richer flavor.
- Add diced jalapeños if you want a spicy kick.
- Serve with a simple green salad or garlic bread for a complete meal.
- Leftovers reheat beautifully in the oven or air fryer for crispy tater tots.
