Ingredients
- 10 oz (280 g) canned tuna in water, drained
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons finely diced celery
- 2 tablespoons finely diced red onion
- 1 tablespoon sweet pickle relish
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- Pinch of salt
- 4 thick slices rustic Italian bread
- 1 medium tomato, thinly sliced
- 1 cup shredded cheddar cheese
- Crushed red pepper flakes (optional)
Serves 2–3 people.
Instructions
Preheat your oven broiler and position the rack about 5 inches below the heating element.
In a medium bowl, combine the tuna, mayonnaise, Dijon mustard, celery, red onion, pickle relish, parsley, onion powder, black pepper, and salt. Mix until everything is evenly combined while keeping some texture in the tuna.
Place the bread slices on a baking sheet and broil for about 1 minute per side, or until lightly golden and crisp. Watch carefully to prevent burning.
Spread the tuna mixture evenly over each toasted bread slice.
If desired, sprinkle a small amount of crushed red pepper flakes over the tuna mixture for extra flavor.
Arrange tomato slices on top of each toast.
Cover each piece generously with shredded cheddar cheese.
Return the baking sheet to the oven and broil for 1–2 minutes, just until the cheese is melted and bubbly.
Remove from the oven and let cool for a minute before serving.
Serve warm with chips, a green salad, pickles, or fresh fruit.
Notes & Tips
- Use dill pickle relish instead of sweet relish for a tangier flavor.
- Monterey Jack, Swiss, or provolone cheese work well as alternatives to cheddar.
- For extra crunch, add finely diced bell pepper to the tuna mixture.
- Thick, sturdy bread works best because it holds the filling without becoming soggy.
- If you enjoy spicy foods, add sliced jalapeños before melting the cheese.
- Leftover tuna mixture can be refrigerated in an airtight container for up to 2 days.
