Easy Mexican Wedding Cookies // with Gift ideas ❤️

There’s something magical about these soft, melt-in-your-mouth cookies dusted in powdered sugar. They’re delicate, buttery, and filled with a subtle crunch from toasted pecans. Whether you’re baking for the holidays, wrapping up homemade gifts, or just craving something sweet and comforting, these cookies are always a hit. Best of all, they’re simple to make and perfect for sharing.

Ingredients (for about 2–3 servings / 20–24 cookies)

  • 1 cup pecans, roughly chopped
  • 1 cup (2 sticks) unsalted or salted butter, softened
  • ½ cup powdered sugar (plus extra for coating)
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon ground cinnamon

Instructions
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Place the pecans in a food processor and pulse a few times until they are finely chopped but not pasty. You want small bits for texture, not a powder.

In a large bowl, combine the softened butter and powdered sugar. Mix until smooth and creamy. Stir in the vanilla extract.

Add the chopped pecans and cinnamon, mixing until evenly distributed. Gradually add the flour, stirring until a soft dough forms. You can finish mixing with your hands to bring everything together into a smooth ball.

Scoop out small portions of dough (about 1 teaspoon each) and roll them into balls. Place them on the prepared baking sheet, leaving a little space between each one.

Bake for about 15–18 minutes, or until the bottoms are lightly golden. The tops should remain pale.

Remove from the oven and let the cookies cool completely. Once cooled, place them in a large bag or bowl with powdered sugar and gently toss until fully coated.

Notes & Tips

  • Let the cookies cool fully before coating—this keeps the sugar from melting.
  • For extra sweetness, you can roll them in powdered sugar a second time before serving.
  • Walnuts can be used instead of pecans if you prefer.
  • Store in an airtight container—they stay fresh and tender for several days.

These cookies are perfect for sharing—arrange them in a tin, add a ribbon, and you’ve got a thoughtful homemade gift. Give them a try and enjoy every soft, buttery bite!
